Recipe of Paneer Kaju Masala

Sorry I have been MIA for last couple of days as I have started WFH and it has been a lot of work load for me so i didn't have time to update you guys. But I'm back with yet an other mouth watering dish for all my vegetarians ( and my non vegetarians also) , to enjoy.
This time I have decided to collab with my aunt to show you one of her delicious recipes which I know you guys will love and enjoy - PANEER KAJU MASALA

Prep Time : 25 mins
Cooking time : 20 mins

INGREDIENTS:

Paneer / Cottage Cheese - 200 Gms
Onion - 4
Tomato - 3 - 4
Cashew / Kaju - 10-15 pieces
Chilli Powder - 2 Tsp
Garam Masala - 1/2 Tsp
Kasuri Methi - 1 Tsp
Ginger and Garlic - 2 Tsp
Sajeera - 1/2 Tsp
Salt, Turmeric, Coriander, Fresh Cream as required

Preparation:

  • Finely chop onions and fry it until it becomes golden brown and crispy. After keeping it aside for 10 mins, take a mixer and add the fried onions and grind it until it becomes a fine onion paste.
  • Then saute chopped tomatoes well and keep it aside. After it has cooled take a mixer and add the tomatoes into it and grind it into fine tomato puree.
  • Take a mixer and grind Kaju into fine powder. It is not required to fry the Kaju.

PROCESS:

Step 1 - Take a pan, add 2 Tbsp of oil and add sajeera and let it fry for a bit. Then add the onion paste and stir it for 2 mins.

Step 2 - Next add ginger and garlic paste and turmeric as required then stir it for 2-3 mins on low flame.

Step 3 - Now add the tomato puree and stir it for 5 mins on medium flame then add chilli powder, 
salt (min.1 Tsp) , garam masala and kasuri methi then cover it with a lid and let it cook for 5 mins on medium flame.

Step 4 - Then add Paneer and stir it well for 5-6 mins until the Paneer has coated well with masala.

Step 5 - Add half a cup of water, mix it well and let it boil on medium flame.

Step 6 - Then remove the lid and make sure the curry's texture is upto your liking. 

Step 7- Finally, add the Cashew powder and cook for 2-3 mins. Lastly, for the topping add chopped coriander leaves and some fresh cream for better taste. Serve it with Roti / Paratha / Garlic Naan.

Note: We recommend making fresh home-made Paneer which gives a soft texture along with better tasting and easy cooking which is also healthier than store bought Paneer.
